These beans posess an even moisture content, not too wet, not too dry. Try roasting to the high end of a medium roast to obtain a balance between the bright, citrus notes and rich aroma. Take this bean a little higher to the low end of a high roast and you will discover less citrus but obtain a more buttery, caramel-apple like fruit note. Go further to a good solid high roast and take delight in the toffee-chocolate finish and amazing body of this truly changeable coffee bean.
